As we continue our culinary journey into the fascinating world of crossover cuisines, in today’s post we are going to explore yet another dish that came to India from Europe (its origins are either in Italy or Spain). The Brits brought it with them as a breakfast item. The Indians found it too bland and so they customised the recipe for the Indian palate by adding the spicy warmth of green chillies and a dash of pungent and aromatic Mustard Oil to create an exciting experience for the taste buds.
This dish is called Onion-Mushroom Scrambled Eggs and it has the power to really uplift your mood at the breakfast table. What a great way to start your day!
Here are the ingredients that you will require.
Ingredients:
Eggs: 5
Onion: 1, large
Garlic (Lasun): 4 cloves
Mushrooms: 200 grams
Green Chillies: 2
Mustard Oil: 3 tablespoons
Cheese:100 grams
Garlic-Cheese Spread : 2 tablespoons
Black Pepper Powder: 1 teaspoon
Salt: to taste
The quantities mentioned above are for preparing four servings. Adjust the quantities proportionately to suit the number of servings that you require.
Preparation:
Peel, wash and slice the onion.
Peel, wash and finely chop the garlic cloves.
Slice the mushrooms.
Finely chop the green chillies.
Grate the cheese.
Break the eggs in a mixing bowl. Add the garlic-cheese spread. Season with black pepper powder and salt. Beat the mixture well and keep aside.
Method:
Heat the Mustard Oil in a pan on a High flame. Soon the oil will reach its smoking point and streams of white smoke will begin to rise from the surface of the hot oil. Turn the flame down to Medium.
To the hot oil, add the onion, garlic and mushrooms, and sauté till the onion slices turn light brown in colour.
Next, add the beaten eggs to the pan, pouring the mixture over the top of the sautéed onion, garlic and mushrooms. Add the chopped green chillies and gently stir the mixture until the eggs have almost set.
Now sprinkle the grated cheese over the top of the contents of the pan and use a spatula to gently fold the cheese into the eggs. As soon as the cheese begins to melt, turn the flame off.
Your Onion-Mushroom Scrambled Eggs are now ready to be served. This dish can best be relished with buttered bread or toast – and a steaming cup of tea or coffee on the side. Enjoy your breakfast and have a great morning!
