This week, we are spotlighting the another participant of Homechef Season 2, Maira-binti-shafi and sharing their recipe for Chicken Kolhapuri Masala with you. Chicken Kolhapuri is a renowned dish from Kolhapuri cuisine, known for its spicy, rich, and flavorful taste.
This dish pairs excellently with steamed rice, Bhakri, roti, chapati, naan, or parathas. For a complete meal, serve it with kachumber, vegetable salad, and Chaach.

Ingredients for Chicken Kolhapuri Masala
P Mark Kachi Ghani Mustard oil: 4 tbsp
Chicken: 1/2kg
Grated Coconut: Grate 1 entire coconut
Sesame Seeds: 2 tbsp
Black Cardamom: 4
Green Cardamom: 7
Coriander Seeds: 2 tbsp
Whole Jeera: 1tbsp
Whole Red Chillies: 3
Cinnamon stick: 2
Star Anise: 3
Javitri: 2
Ginger Garlic paste: 2 tbsp
Onions: 3
Red Chilli powder:11/2 tsp
Turmeric powder: 1/2 tsp
Saunf: 11/2 tsp
Dhaniya powder: 1tsp
Garam masala:1tsp
Jeera powder:1tsp
Black Pepper powder: 1/2 tsp
Coriander powder: 1/2 tsp
Cumin powder:1/2 tsp
Turmeric powder:1/2 tsp
Salt: 1 tsp
Method for Chicken Kolhapuri Masala
Marinate the chicken with 1 tsp ginger garlic paste, 1/2 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp turmeric powder, 1/2 tsp saunf, and salt. Mix everything well and let it sit for 1 hour in the fridge.
In a pan, add black cardamom, green cardamom, coriander seeds, whole jeera, whole red chillies, cinnamon sticks, star anise, and javitri.
Add grated coconut to the pan and roast all the masalas until golden brown.
Transfer the roasted masalas to a plate and let them cool down.
Once cooled, grind these masalas to make Kolhapuri masala.
In a kadhai, heat P Mark Mustard Oil.
Add sliced onions and fry them until golden brown.
Add ginger garlic paste and fry for a few minutes.
Add the prepared Kolhapuri masala and mix well. Fry the mixture.
Add the marinated chicken and mix everything thoroughly.
Add red chilli powder, turmeric powder, 1 tsp Saunf, dhaniya powder, garam masala, jeera powder, black pepper powder, coriander powder, and cumin powder.
Mix the chicken with these spices and cook for 2 minutes.
Add enough water to cover the chicken.
Let it simmer and cook until the curry becomes thick.
