To a large extent, Indian street food is about taking global cuisines and customizing them to suit the Indian palate. On this blog, we have already explored “Indianized” versions of Fried Rice, Chow Mein, Cauliflower Manchurian, Club Sandwiches, Spanish Omelettes, Burgers and whatnot. There’s nothing authentic about these dishes but they are truly delicious – and they epitomize the creativity and crazy experimental spirit underlying Indian street food. 


Continuing this eclectic culinary adventure, today we look at a “Made in India” version of French Fries.


Here are the ingredients that you will require.


Ingredients for French Fries

  1. Potatoes: 500 grams

  2. P Mark Mustard Oil: 200 millilitres

  3. Salt: to taste


The ingredients given above yield around six medium-sized servings. Increase or decrease the quantities proportionately depending on the number of servings you require.


Preparation for French Fries

Wash and peel the potatoes. Cut them into slices that are roughly half-a-centimetre in thickness. Then cut the slices into long strips.


The trick involved in making French Fries is to first boil the potato pieces for a couple of minutes (don’t overdo this, the potato pieces should not become soft). Once the potato pieces are boiled, rinse them under running water to bring them down to room temperature. Then place the pieces in chilled water for 15 to 20 minutes. Make sure that the potato pieces are completely submerged in the icy-cold water – if they get exposed to air, they will oxidize and start turning blackish in colour. This should not happen.


Method for French Fries

Heat the Mustard Oil in a pan on a High flame till the oil reaches its smoking point and emits wisps of white smoke. Turn the flame down to Medium.

Deep fry the potato pieces, stirring constantly to ensure even frying. After a minute, turn the flame down to Low and continue frying till the potato pieces turn golden brown in colour.


Turn the flame off. Place the fried potato pieces on paper towels to drain the excess oil. However, our version of French Fries has been made using healthy Indian cold-pressed Mustard Oil – proven to be ideal for deep frying and Indian cooking… so you don’t have to worry about unhealthy trans-fats.


Your Indian-style French Fries are now ready to be served. Sprinkle a little salt over the fries and serve with tomato ketchup.
