This week we bring you another recipe from the heart of Kashmir from an expert in Kashmiri cooking, foziagrasool. Rogan Josh is a rich, classical-style curry of Kashmir. Kashmiri Mushroom Rogan Josh is a vegetarian version of the classic spicy curry from Kashmir.
This version celebrates the earthy flavours of mushrooms, simmered in a vibrant red sauce. It's usually best enjoyed with Indian bread like naan or roti.

Ingredients for Kashmiri Mushroom Rogan Josh
P Mark Kachi Ghani Mustard oil: 4 tbsp
Mushrooms: 1/2 kg
Red Chilli Powder: 21/2 tbsp
Fennel Seed Powder: 1/2 tbsp
Turmeric Powder: 1/2 tbsp
Meat Masala: 1/2 tbsp
Mutton Stock: 1/2 cup
Garlic: 1 tbsp
Onion: 1 (fried)
Method for Kashmiri Mushroom Rogan Josh
Start by cleaning the mushrooms and cutting them in half.
Heat P Mark Mustard Oil in a pan and fry the mushrooms on medium-high flame until they release their water.
Once the water evaporates, add 2 tbsp red chilli powder and mix well.
Add fennel powder, turmeric powder, meat masala, and garlic. Mix everything.
Pour mutton stock, cover the pan, and let it cook for some time.
Heat oil in another pan, add garlic and 1/2 tbsp of red chilli powder. Mix it into the gravy.
Add fried onion paste. Cover the pan again and let it cook for some more time.
