The next destination in our virtual journey into the exciting world of Indian street food is Gujarat. In an earlier post, we had savoured the famous Pav Bhaji of Maharashtra. This time we head towards the Kutch region of Gujarat to meet a distant relative of Maharashtra’s Pav Bhaji – it’s called Kutchi Dabeli.
Here are the ingredients that you will require for making this popular street food item from Gujarat.
Ingredients for Kutchi Dabeli
Potatoes: 1 Kilogram
Onions: 4. Medium-sized
Peanuts: 100 grams
Mustard Oil: 100 millilitres
Red Chilli Powder: 2 teaspoons
Garam Masala: Just a pinch
Sugar: 1 teaspoon
Garlic (Lahsun) Chutney: 2 tablespoons
Tamarind (Imli) Chutney: 4 tablespoons
Salt: 2 teaspoons
Buns (Pav): 8
The ingredients mentioned above are for making four servings. Adjust the ingredients proportionately in accordance with the number of servings you require.
Preparation for Kutchi Dabeli
Wash and peel the potatoes. Boil them till they become soft (use a fork to check that they are done). Then mash them and keep aside.
Wash and peel the onions and coarsely chop them.
Method for Kutchi Dabeli
Heat a tablespoon of Mustard Oil in a pan and deep-fry the peanuts along with the sugar, a pinch of red chilli powder and a teaspoon of salt.
When the peanuts are fried, add the remaining Mustard Oil to the pan along with the mashed potatoes, a teaspoon of salt, the remaining red chilli powder and the garam masala, garlic chutney and tamarind chutney. Mix well – and fry for a minute or two, constantly stirring the contents.
Turn the flame off and let the mixture cool a little.
Slice the buns (Pav) horizontally across the middle and fill each bun with the potatoes, peanuts and spices mixture. Sprinkle the chopped onions over the mixture and that’s it. You’re done!
Your traditional Kutchi Dabeli is now ready to be served. In Gujarat, many people prefer to have this snack with a hot cup of tea.
