On the occasion of Maharashtra Day, we bring you a recipe from Maharashtra from an expert chef, Sam, renowned for his appearances on Masterchef. Mixed veg is a highly nutritious dish as it incorporates the benefits of multiple vegetables.
This vegetable is generally cooked in Maharashtra for a special occasion like a wedding or housewarming party.

Ingredients for Mixed Veg
P Mark Kachi Ghani Mustard oil: 2 tbsp
Onions: 3
Tomato - 2
Soaked Cashews - 6-7
Potato - 2
Mixed Vegetables
Cumin Seeds - 1 tsp
Bay Leaves - 1
Black Pepper - 2-3
Cloves - 2-3
Black Cardamom - 1
Ginger Garlic Paste - 1 tbsp
Salt: According to taste
Maharashtrian gharguti chutney - 2 tbsp
Coriander powder- 1tbsp
Garam masala- 1 tbsp
Turmeric powder- 1 tsp
Mixed Vegetables - Any other vegetables that are in season or are your favourites
Fresh Coriander - for garnish
Method for Mixed Veg
Heat a kadai and add P Mark Kachi Ghani Mustard oil.
Sauté the onions until cooked, then remove them from the kadai.
Next, cook tomatoes and soaked cashews in the kadai, then remove and set aside.
Blend the cooked onions, tomatoes, and cashews to form a purée.
Reheat mustard oil in a handi and fry the potatoes for a minute or two.
Add mixed vegetables to the handi and sauté for 4-5 minutes, then remove.
Toss cumin seeds, bay leaf, black pepper, cloves and black cardamom into the handi and roast them.
Add the onion, tomato, and cashew purée, along with ginger-garlic paste, and cook.
Add Maharashtrian gharguti chutney, turmeric powder, coriander powder, garam masala, and salt; cook for 3-4 minutes.
Return the sautéed vegetables to the handi, add hot water, and mix well.
Add fresh coriander, cover, and simmer until the vegetables are well cooked.
Your Mixed Veg is ready to be served hot.
