In an earlier post, we talked about how many of us are unwittingly compromising on our daily nutrition while coping with the pressures of the COVID-19 situation. We have shared several healthy recipes that can be prepared without sacrificing taste and without spending a whole lot of time in the kitchen.
Today, we are going to take your everyday Roti – and turn it into something that’s healthier, tastier and more wholesome. We are going to make Paalak Paneer Methi Roti.
Here are the ingredients that you will require.
Ingredients for Paalak Paneer Methi Roti
Whole Wheat Flour: 150 grams
Spinach (Paalak): 100 grams
Fenugreek (Methi) Leaves: 100 grams
Yogurt (Dahi): 1 tablespoon
Cottage Cheese (Paneer), grated: 2 tablespoons
Mustard Oil: 1 tablespoon
Red Chilli Powder: Half-a-teaspoon
Turmeric (Haldi) Powder: Just a pinch
Asafoetida (Heeng): Just a pinch
Sugar: Half-a-teaspoon
Salt: to taste
The ingredients mentioned above are for making six Rotis; adjust the ingredients proportionately to suit the number of Rotis you require.
Preparation for Paalak Paneer Methi Roti
Finely chop the spinach.
Finely chop the Fenugreek leaves.
In a mixing bowl, take the whole wheat flour, around 50 grams of spinach, 50 grams of fenugreek leaves and the yogurt. Mix well. Then add the mustard oil, red chilli powder, turmeric powder, asafoetida, sugar and salt. Knead the mixture to make the dough for your Rotis. To get the desired consistency you can add more yogurt as required (don’t use water).
Divide the dough into six equal portions and roll each portion into a Roti.
Method for Paalak Paneer Methi Roti
Heat a Tava (griddle) on a Medium flame. Cook each Roti on the Tava, ensuring even cooking on both sides. Keep aside.
Next, sprinkle the remaining spinach and fenugreek leaves over the top of each Roti along with the grated cottage cheese. Heat each Roti for a minute or so on a Low flame. Ensure that the lower surface of the Roti doesn’t get burnt.
Your Paalak Paneer Methi Rotis are now ready – serve them hot.
Why are these Rotis so healthy? Because when spinach, fenugreek leaves and cottage cheese are added to whole wheat flour, it increases the calcium content of each Roti by more than seven times! Spinach, as we all know, is an excellent source of dietary magnesium and offers a wide array of health benefits. Fenugreek is rich in fibre, protein, iron, manganese and magnesium. Paneer is an excellent source of calcium and is also rich in protein, potassium, phosphorus and folate. What a combination!
