This quintessential winter delight showcases the rich and robust flavours of mustard greens and is traditionally enjoyed with makki ki roti or maize flatbread. Ingredients for Sarson ka Saag

  • Mustard leaves: 5 cups (washed and chopped)

  • Spinach: 5 cups (washed and chopped)

  • Green chillies: 1 ½ tbsp (roughly chopped)

  • P Mark Mustard Oil: 1 tbsp

  • Cumin seeds: 1 tsp

  • Garlic: 1 tbsp (finely chopped)

  • Ginger: 1 tbsp (finely chopped)

  • Onions: ½ cup (finely chopped)

  • Asafoetida: ¼ tsp

  • Turmeric powder: ½ tsp

  • Chilli powder: 1 tsp

Method for Sarson ka Saag

  1. Start by boiling a sufficient amount of water in a deep non-stick pan. Add the mustard leaves, spinach, and green chillies, ensuring a good mix. Cook over high heat for 4 to 5 minutes, occasionally stirring.

  2. Strain the mixture through a strainer and allow it to drain thoroughly.

  3. Quickly refresh the mixture twice in cold water and drain it well again. Let it sit for 2-3 minutes to cool slightly.

  4. Blend the mixture in a mixer with half a cup of water, creating a coarse paste. Set it aside.

  5. Heat the mustard oil in a non-stick kadhai and introduce the cumin seeds.

  6. Once the seeds begin to crackle, add the garlic, ginger, and asafoetida. Sauté over medium heat for about 30 seconds.

  7. Next, add the onions and sauté them over medium heat for 1 to 2 minutes.

  8. Add the mustard leaves-spinach mixture, along with turmeric powder, chilli powder, coriander-cumin seeds powder, and salt.

  9. Ensure a thorough mix and cook over medium heat for 2 to 3 minutes, occasionally stirring.

  10. Serve the sarson ka saag hot, accompanied by makki ki roti. Enjoy your meal!
