In today’s post, we continue our endeavour to fill the void left by the absence of your favourite street food items in your daily life. The COVID-19 situation has made eating out a risky proposition, compelling us to sacrifice a lot of our street food desires. On this blog, we have regularly been suggesting ways to enjoy the same snacks and meals – but in a healthy, homemade way.
In an earlier post (dated 8th September 2020), we wrote about making that famous roadside-eatery dish: Fried Rice. Let’s complement that with another favourite from the same Indo-Oriental menu – Chow Mein… made in a typically Indian style. It is hopelessly inauthentic but delightfully delicious!
Let’s begin by gathering the ingredients.
Ingredients:
Noodles: 200 grams
Mustard Oil: 4 tablespoons
Onion, chopped: 100 grams
Cabbage, chopped: 100 grams
Capsicum: 1, medium sized
Garlic: 6 cloves
Green Chillies: 3
Soya Sauce: 2 tablespoons
Chilli Sauce: 1 tablespoon
Vinegar: Half-a-teaspoon
Black Pepper Powder: 1 teaspoon
Chilli flakes: 1 teaspoon
Salt: to taste
The ingredients given above are for serving three persons. Increase or decrease the quantities proportionately depending on the number of servings you require.
Preparation:
Finely chop the green chillies.
Finely chop the onion.
Finely chop the cabbage.
Wash, peel and chop the garlic into slices.
Chop or dice the capsicum into pieces.
Method:
Let’s begin by making the noodles. In a large pan, heat water till it comes to a boil. The amount of water should be enough to completely cover the noodles once they are added to the pan. Now add the noodles along with two tablespoons of Mustard Oil and a little salt – a teaspoonful should be enough. Let the mixture continue to boil for another ten minutes or so, till the noodles are almost done. Turn the flame off.
Strain the noodles to get rid of excess water. Add a teaspoon of Mustard Oil and mix the partially cooked noodles with the oil. Keep aside.
Heat the remaining Mustard Oil in a pan, on High heat. Add the onion, garlic, green chillies and chilli flakes, and stir. Cook for around two to three minutes. Then add the cabbage and continue cooking till the cabbage becomes soft.
Next, add the capsicum and continue cooking for another two to three minutes.
Now add the noodles. Mix it well with the onion, garlic, green chillies, chilli flakes, cabbage and capsicum. Next, add the soya sauce, chilli sauce, vinegar and black pepper powder. Stir vigorously to mix all the ingredients. When the noodles are done, turn the flame off and give the mixture one final stir.
Your homemade version of the Indian roadside Chow Mein is now ready to be served. Serve it hot – and enjoy it will complete confidence because – unlike the usual street food items you get by the roadside – your Chow Mein is made with healthy Mustard Oil and fresh veggies in a clean, hygienic environment.
