Regular readers of this blog would have noticed that we always emphasize the fact that you should use cold-pressed Mustard Oil. Cold-pressing oil extraction methodology is 100% natural – no chemicals or artificial additives are used during the manufacturing process. Nutritionist and diet consultant Nupur Arya points out that cold-pressed oils are minimally processed and, typically, are rich in good fats. Mustard Oil in its cold-pressed form is rich in Polyunsaturated Fatty acids (PUFA) and Monounsaturated Fatty Acids (MUFA) – both of which are good fats. It is also one of the richest sources of Omega-3 Fatty Acids that play a key role in reducing the risks of heart disease, atherosclerosis, hypertension and stroke.


Dr Vijaya Agrawal, a dietician and nutritionist, says that plant-based oils like mustard oil in their cold-pressed form contain phytosterols, a family of molecules that block bad cholesterol (LDL) from being absorbed. This helps in maintaining the body’s triglyceride balance and lowers the risks associated with Coronary Heart Disease.


Health Benefits:

The cold-pressing method has been used in India for mustard oil extraction across thousands of years. In ancient times, a bullock yoked to a rotary kiln would slowly move the kiln round and round. The mustard seeds in the kiln would get compressed and oil would be extracted in the process. Today, contemporary cold-pressing technology remains basically the same – with the exception that the bullock-and-yoke are gone and the rotary action of the kiln is automated.
