Traditional Green Chilli Pickle: A Fiery Delight from Gujarat

Let’s turn the heat up with this sizzling pickle – made with Green Chillies. This traditional Achaar is very popular in Gujarat. Try it!


The ingredients that you will require for this Green Chilli Pickle are:


Ingredients for Green Chilli Pickle

  1. Green Chillies, large: 300 grams

  2. P Mark Mustard Oil: 4 tablespoon

  3. Mustard Seeds (Rai): 1 tablespoon

  4. Lemon Juice: 4 tablespoon

  5. Turmeric (Haldi) Powder: Just a pinch

  6. Asafoetida (Heeng): Just a pinch

  7. Salt: to taste


Preparation for Green Chilli Pickle

Wash the Green Chillies thoroughly and dry them. Make sure that they are completely dry. Any residual moisture could ruin your pickle.


When the Green Chillies are completely dry, cut them into small circular slices. You could also cut vertically along the length of the chilli – creating two elongated pieces instead of small circular pieces. It’s entirely up to you – whatever you prefer.

Grind the mustard seeds.


Wash and sterilize a glass or porcelain pickling jar and wipe it dry. Let it dry completely. Once again, make sure it’s completely dry… no droplets of residual moisture.


Method for Green Chilli Pickle


In a large bowl, add the green chilli pieces, lemon juice and salt. Mix well.


Heat the Mustard Oil in a pan on Medium heat till the oil reaches its smoking point. Add the Mustard Oil to the bowl and mix the contents thoroughly. Always remember that the most critical ingredient in the entire pickling process is cold-pressed Mustard Oil. This is the natural preservative that facilitates the pickling process and keeps the pickle fresh and healthy.


Next, add the Mustard Oil to the bowl containing the green chilli pieces, lemon juice and salt. Mix well – and then add the turmeric powder, ground mustard seeds and asafoetida. Continue mixing.


Next, carefully pour/transfer the contents into the pickling jar that you had sterilized and dried earlier. Cover the mouth of the jar with a clean, dry muslin cloth and tie it firmly with a cord around the neck of the jar. Place the jar in the sun (ideally outdoors in a place like a terrace, a balcony or a window sill). Remember to bring the jar indoors at night to prevent moisture from setting in. Repeat this process for around four to five days.


Your traditional Green Chilli Pickle is now ready. Add a special sizzle to your taste-buds during every meal. What an experience!
