Ingredients for Veg Thukpa
P Mark Mustard Oil - 3 tbsp
Garlic: 7-8 cloves, minced
Green Chilies: 1 green chilli, chopped or diagonally cut
Ginger: 1 inch, chopped
Onions: 1/3 cup, sliced
Tomatoes: 1/3 cup, sliced
Turmeric: 1/4 tsp
Red chilli powder: 1 tsp
Jeera (cumin) powder: 1 tsp
Garam masala: 1 tsp
Warm Water: 2 glasses
Stock Cube: 1
Cabbage: 1/3 cup, julienned
Bell Pepper: 1/3 cup, julienned
Mushroom: 1/3 cup, sliced
Soy Sauce: 2 tsp
Salt & Black Pepper: To taste
Noodles: As required
Coriander: Small handful, chopped
Lemon Juice: 1 tsp
Method for Veg Thukpa
Heat the Oil: Set a pot on medium heat. Once the pot is hot, lower the flame and add mustard oil. Heat the oil until it releases its aroma.
Aromatics: Add ginger, garlic, and green chillies. Sauté for a few minutes until fragrant.
Onions: Add the sliced onions and cook on medium-high flame for a minute until they turn translucent.
Tomatoes: Add the sliced tomatoes and cook for another minute until they soften.
Spices: Add all the powdered spices (turmeric, red chilli powder, jeera powder, and garam masala). Cook on high flame for a minute to release the flavors.
Water & Stock: Pour in warm water and add the stock cube. Bring the mixture to a boil.
Veggies: Once boiling, add the julienned cabbage, bell pepper, and sliced mushrooms. Stir in soy sauce, salt, and black pepper. Cook for 2-3 minutes, ensuring the veggies retain their crunch.
Serve: Your Veg Thukpa soup is ready! Serve hot with cooked noodles, a squeeze of lemon juice, and a sprinkle of fresh coriander.
